portfolio with the addition of Chad Ryan Ogden as Executive Sous Chef
overseeing 888 Las Vegas Buffet. Chef Ogden’s international work experience and
culinary concepts will surely elevate guests’ dining experiences with pleasant

A native of Traverse City, Michigan, the
cherry capital of the United States, Ogden’s passion for cooking peaked at an
early age. Since then, he has gained vast experience in some of the most
sought-after kitchens in the United States and Japan. At the age of fifteen, he
began cooking at The Lark Creek Inn, California – one of the most honoured
restaurants in the United States. He then decided to go to the Culinary Institute
of America in New York, and from there his desire and dedication helped him
survive the rigorous regiment in the best restaurants of New York City, including
French restaurants Daniel and Montrachet. He has also worked with Charlie
Trotter’s in Chicago, Illinois. After several years of training under various
renowned chefs, Ogden decided to look for new culinary challenges by moving to
Japan, where he made stops at Grand Hyatt Tokyo, Hyatt Regency Kyoto and City
Club of Tokyo as Sous Chef. Prior to joining Sands Macao, Ogden was Chef de
Cuisine at a local fine dining restaurant serving international cuisine,
including buffet.
At Sands Macao, Chef Ogden works closely with
Executive Chef Toni Mak and incorporates the finest ingredients in the recipes
he creates. His philosophy is to gently coax flavors out of the season’s
freshest ingredients rather than introducing overpowering ingredients to impose
a specific style or flavor. "What I create is based on what's available
for me on the market. Then I will pick an
item and think about what I need in order to get the most flavor out of that item,
what preparation goes best with it, and how it will be presented to the guest. Only
when I get the right balance of flavor for the dish will it be presented to the
diner,” says Chef Ogden.
